Dr. Grijalva is an adjunct faculty member with the School of Arts and Humanities at St. Edward's University. He has held teaching appointments with the Departments of English and Languages, Literatures, and Cultures. Courses he teaches or has taught include:

- CHLX 1302 - Introduction to Chicanx/Latinx Studies
- CHLX 2315 - The U.S./Mexico Borderlands
His scholarly interests include the History of Rhetorical Theory and Practice, the relationship between Rhetoric and Philosophy, Colonial and 19th Century Mexican Studies, and Chicanx/Latinx Studies. His scholarly work has appeared in Mexican Studies/Estudios Mexicanos and Aztlán: A Journal of Chicano Studies.
